Sustainable Sushi
In August 2009, West Seattle’s Mashiko Sushi transitioned to an entirely sustainable seafood menu.
The March/April 2010 issue of Edible Seattle features an article by Chef Becky Selengut on sustainable sushi that features Mashiko.
While Mashiko is alone in town for now, as more consumers learn about issues of sustainable seafood, we can hope that more restaurants will make the switch. If you can’t make it out to West Seattle often enough for your sushi fix but want to stick with sustainable choices, you can check out Casson Trenor’s site Sustainable Sushi to learn some best choices when eating out (including a Virtual Sushi Dinner tool where you place your order and learn the results).
Or make some sushi at home. Once you learn the techniques, you can control the ingredients and make the choices yourself, focusing on sustainable seafood. The Events Calendar to the right features many sushi rolling classes that can help you get yourself up to speed.
