<p>I saw Jennifer Hahn speak last year at Streamkeepers up in Everett and found her an entertaining and informative speaker. Her book is a great combo of foraging information and delicious-looking recipes from great chefs in the region.</p>

<h3>Highlights from the June Streamkeepers talk</h3>

<li><span class="full-image-float-right ssNonEditable"><span><img style="width: 250px;" src="http://www.freshpickedseattle.com/storage/pacific-feast/Turkish%20Towel.JPG?__SQUARESPACE_CACHEVERSION=1312871245708" alt="" /></span><span class="thumbnail-caption" style="width: 250px;">Turkish Towel seaweed, key ingredient in Ocean Chocolate Pudding Pie</span></span>She noted that her foraging skills started to develop as she had a boyfriend at the time who never brought enough food on their kayaking expeditions. Now, part of her motivation to forage is to help keep her kayak light by allowing her to bring less food with her on long trips.</li>
<li>The physical exertion of her long kayak trips brings into sharp relief the value of every calorie she consumes along the way. She said when she&rsquo;s eating her wild-caught meals out on a 75-day trip, she can &ldquo;feel the lingcod in [her] arms.&rdquo;</li>
<li>Her book has lots of delicious-looking gourmet recipes, but one of the most fun ones is the one that has tells you how to transform the mucilaginous interior of the fucus seaweed into a Cheeto-like cheesy puff.</li>
<li>She&rsquo;s also got a recipe for transforming the rough-looking seaweed called &ldquo;Turkish Towel&rdquo; into a smooth chocolate pudding. (Food folks might already know that carrageenan &ndash; a common food thickening agent &ndash; comes from seaweed.)</li>
<li>Hahn also spoke about the concept of wild food stewardship and the importance of sustainable harvesting. She noted the <strong><a href="http://www.ou.edu/cas/botany-micro/ben/ben180.html">one-in-twenty rule of thumb</a></strong> proposed by botanist Dr. David H. Wagner and James Grimes. It proposes &ldquo;never collect more than one out of twenty plants. It means NOT collecting ONE plant UNTIL you have found at least TWENTY. Only if twenty are found should you consider collecting one plant. And forty should be present before two are taken, and so on. The rule applies to parts of plants, also: remove no more than five percent (one-twentieth) of a shrub, one fern frond from a clump of twenty, 5% of a patch of moss, 5% of seeds from a plant.&rdquo;</li>

<p>New classes were just announced for April-June, and literally in the time it has taken me to put this post together, some classes filled. I cannot overstate how fast these fill! I am especially interested in the carnival food, Croatian food, and heirloom bean classes but who can even choose?! There are classes on preserving, cocktails, ice cream, Asian dumplings, <a href="http://littleuncleseattle.com/">Little Uncle</a> thai curries, cheese making and a lot more. Don't delay!</p>

<p>Keep an eye out for ones featuring George DePasquale of Essential Baking. I got to watch him teach many times while working at Cook's World and I think he does an excellent job of breaking down the science of artisan bread making. I liked his classes so much, I even had my non-cooking parents take his flatbreads class when they came to visit and they had a great time.</p>
