It's sometimes hard to wrap one's head around the fact that old milk can turn into something so delicious as cheese. But it does, and thank goodness for it.

Here are some resources and events to help you learn more about the varieties of this wonderful food stuff, how to pair it with other foods or beverages, and how to make it at home.

General Info

• First stop must be Tami Parr’s website. She is the author of Artisan Cheese of the Pacific Northwest.
• The Washington State Cheesemakers Association has a listing of local cheesemakers.
• Also check out this episode of Sound Focus for an interview with Julie Steil of River Valley Ranch.
• The Seattle Cheese Festival happens in the spring.
• See the feed below for the current updates from local cheese blogs.

The calendar in the second column will have the current offerings I've found, but the below are some other places to check out. If they don't have something currently, you might also be able to ask about private classes or tastings, or plan a date in the future.

• Jessica Dally teaches cheesemaking through the Seattle Free School and other spots around town. You can also contact her for private classes.
• Cook's World schedules cheesemaking classes regularly.
• Cheesemaking teacher Linda Conroy is based in Wisconsin, but she often teaches in Seattle in the summer.
• Local homebrew supplier The Cellar Homebrew also has cheesemaking supplies.
• Mark Solomon is a local cheesemaker and teacher. Check out the calendar above or his site for his current classes. He is also available for private consultations.
