It feels like the interest in canning, pickling and preserving has been growing exponentially in the past couple of years. It's a natural progression of our interest in eating seasonally: how else to bring some of the abundance of summer into the colder months?
If you'd like to pick up some new homesteading skills, here are some canning, pickling and preserving classes and events in the Seattle area.
Resources
A group of passionate preservers, including quite of few of Seattle’s food folks, started the Canvolution with the site Canning Across America, "a nationwide, ad hoc collective of cooks, gardeners and food lovers committed to the revival of the lost art of 'putting by' food." The group's "goal is to promote safe food preservation and the joys of community building through food. We believe in celebrating the bounty of local and seasonal produce and taking greater control of our food supply." Check out their Resources page for more helpful info.
Local author Amy Pennington's book Urban Pantry is a guide to "thrifty, sustainable and seasonal" kitchen, including canning and preserving ideas.
Jessica Dally of the Seattle Free School is a Master Canner. She does occasional free classes through the Free School, and you can contact her to schedule private canning classes.
Lesa Sullivan is a local private chef and cooking teacher. She can be contacted for private class in canning (low acid, not high-pressure), picking, fermenting and preserving.
NEW!Shannon Valderas teaches canning classes in Seattle. Her blog Yes You Can NW includes posts on canning how-tos and tips.
Vickie Phelps offers very affordable canning classes, including unusual topics like ice cream toppings and hot sauce. Check out her blog Seattle Can Can and see her classes there or in the calendar.
Summer in a Jar offers canning classes. They will be added to the calendar as they are offered, but you can also check out the site for more info and a newsletter sign-up.

Goods for the Planet will be offering weekly food preservations class each Sunday in 2010. No class on Easter. More info here.
21 Acres will be offering canning classes later in the year. I'll add them to the calendar when announced, but check their site in the meantime in case you get there before me!
